Description

Peach Coffee Cake is a tender, buttery dessert made with sweet ripe peaches and topped with a crunchy cinnamon streusel. It’s a perfect treat for breakfast, brunch, or dessert.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh peaches, peeled and diced
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or line it with parchment paper.
  2. Cream the softened butter and granulated sugar together in a large mixing bowl until light and fluffy (3–4 minutes).
  3. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk. Begin and end with the flour mixture. Mix until just combined.
  6. Gently fold in the diced peaches.
  7. In a medium bowl, mix the flour, brown sugar, and cinnamon for the streusel topping. Add melted butter and stir until crumbly. Add nuts if using.
  8. Pour the batter into the prepared baking pan and smooth the top. Sprinkle streusel topping evenly over the batter.
  9. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
