Description

  • 1 teaspoon vanilla extract
  • 2 medium fresh peaches, peeled and diced
  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set aside.
  3. In another bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the melted butter, eggs, and vanilla extract, mixing until fully incorporated.
  4. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  5. Gently fold in the diced fresh peaches.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Once baked, let the muffins cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.
