Description

Peach Crumble Cheesecake Bars are a delightful treat that combines creamy cheesecake with sweet peaches and a buttery crumble topping.


Ingredients

  • 8 oz (226 g) cream cheese, softened
  • 3/4 cup (150 g) granulated sugar, divided
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 3 medium fresh peaches, peeled and diced
  • 1 cup (120 g) all-purpose flour, divided
  • 1 cup (90 g) rolled oats
  • 1/2 cup (100 g) brown sugar
  • 1/2 cup (115 g) unsalted butter, melted
  • 1 teaspoon (2 g) ground cinnamon
  • 1/4 teaspoon (1 g) salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch (20×20 cm) baking dish.
  2. In a mixing bowl, beat the softened cream cheese with 1/2 cup (100 g) of granulated sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla extract.
  3. Toss diced peaches with 1 tablespoon (15 g) of flour to coat.
  4. In a separate bowl, combine rolled oats, remaining 1/2 cup (50 g) of flour, brown sugar, melted butter, ground cinnamon, and salt. Mix until crumbly.
  5. Pour the cheesecake mixture into the baking dish, spread evenly, and scatter the peaches over it. Sprinkle the crumble topping on top.
  6. Bake for 35-40 minutes until golden brown and set around the edges.
  7. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
  8. Cut into squares and serve cold or at room temperature.

  • For gluten-free, use gluten-free flour and oats.
  • For vegan, use plant-based cream cheese and flax eggs.
