- 4 cups fresh peaches, peeled and diced
- 2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1 cup old-fashioned oats
- 1 cup unsalted butter, softened
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a medium bowl, combine diced peaches with 1/4 cup of brown sugar and a pinch of cinnamon, then set aside.
- In a large mixing bowl, combine flour, oats, remaining brown sugar, cinnamon, salt, and baking powder. Add softened butter and vanilla extract, mixing until it resembles coarse crumbs.
- Press two-thirds of the crumble mixture into the bottom of the prepared baking dish. Spread the peach filling over the crust and sprinkle the remaining crumble mixture on top.
- Bake for 35-40 minutes until golden brown and bubbly.
- Allow to cool for 15-20 minutes before cutting into squares or bars.
Notes
- Store leftovers in an airtight container at room temperature for up to three days or refrigerate for up to a week.
- To reheat, warm in the microwave for a few seconds.
- For freezing, wrap individual bars in plastic wrap and place in a freezer-safe bag for up to three months.
