- 2 cups fresh peaches, peeled and sliced
- 8 oz cream cheese, softened
- 1 cup granulated sugar, divided
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1 cup rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9-inch round cake pan.
- Combine sliced peaches with 1/4 cup of granulated sugar and set aside.
- Beat softened cream cheese with the remaining 3/4 cup of sugar and vanilla extract until smooth.
- Mix rolled oats, flour, melted butter, cinnamon, baking powder, and salt until crumbly.
- Spread half of the crumble mixture in the cake pan, layer with cream cheese mixture, add peach filling, and top with remaining crumble.
- Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
- Cool for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Freeze wrapped tightly in plastic wrap and foil for later enjoyment.
