Ingredients

  • 2 cups fresh peaches, peeled and sliced
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Combine sliced peaches with 1/4 cup of granulated sugar and set aside.
  3. Beat softened cream cheese with the remaining 3/4 cup of sugar and vanilla extract until smooth.
  4. Mix rolled oats, flour, melted butter, cinnamon, baking powder, and salt until crumbly.
  5. Spread half of the crumble mixture in the cake pan, layer with cream cheese mixture, add peach filling, and top with remaining crumble.
  6. Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  7. Cool for 10 minutes, then transfer to a wire rack to cool completely before serving.
