Description

- 4–5 medium peaches (about 3 cups chopped)
- 3/4 cup granulated sugar
- 2 cups heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Wash the peaches and blanch them in boiling water for 30 seconds, then place in an ice bath to easily remove skins. Pit and chop them into small pieces.
- Sprinkle 1/4 cup sugar over the chopped peaches and let sit for 15–20 minutes to draw out juices.
- Blend the peaches into a puree, leaving chunks if desired for texture.
- In a separate bowl, whisk together the heavy cream, whole milk, remaining 1/2 cup sugar, vanilla extract, and lemon juice until sugar dissolves.
- Fold in the peach puree and stir until well combined. Adjust sweetness to taste.
- Cover and refrigerate the mixture for 1–2 hours until thoroughly chilled.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20–25 minutes).
- Transfer the churned ice cream to an airtight container and freeze for 4–6 hours until firm.
- Before serving, let the ice cream sit at room temperature for 5 minutes for easier scooping. Enjoy!
