  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. Prepare the peach filling: In a bowl, mix diced peaches, granulated sugar, flour, cinnamon, and lemon juice. Set aside for 10-15 minutes.
  3. Make the crust and topping: In a large bowl, mix flour, oats, brown sugar, baking powder, baking soda, and salt. Add melted butter and vanilla, stir until crumbly. Reserve 1 cup of the mixture for topping.
  4. Press the remaining crust mixture evenly into the prepared baking dish. Bake for 10-12 minutes until just set.
  5. Remove from oven and spread peach filling evenly over the warm crust. Sprinkle reserved crumble mixture on top.
  6. Bake for 25-30 minutes, or until the topping is golden and the filling is bubbling.
  7. Cool in the pan for at least 30 minutes before slicing. For cleaner cuts, refrigerate for 1 hour before serving.
