- 1/2 cup powdered sugar

Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, granulated sugar, baking powder, and salt. Cut in chilled butter until mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time until dough comes together. Do not overwork.
- Roll dough on a lightly floured surface and transfer to pie dish. Trim excess and crimp edges. Prick bottom with a fork.
- Line crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove weights and paper; bake 10 more minutes until lightly golden. Let cool.
- In a bowl, combine sliced peaches, granulated sugar, cornstarch, and cinnamon. Gently mix and let sit for 15 minutes.
- In another bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- Spread peach mixture evenly in cooled crust. Dollop and smooth whipped cream over peaches.
- Cover and chill pie in refrigerator for at least 2 hours.
- Garnish with fresh peach slices or mint leaves before serving.
