Ingredients
Scale
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs, separated
- 1 cup 2% milk
- 2 tablespoons butter, melted
- 1/4 teaspoon vanilla extract
- 1–1/4 cups chopped frozen peaches, thawed, divided
- 2 cups sweetened whipped cream or whipped topping
- 3/4 cup peach yogurt
- Optional: Toasted pecans and ground cinnamon
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together egg yolks, milk, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, stirring just until moistened. Fold in 1 cup of chopped peaches.
- In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the batter.
- Preheat your waffle maker. Pour in enough batter to cover the surface, then cook until golden brown, about 4–6 minutes.
- Cut waffles into 1-inch strips.
- In a bowl, fold whipped cream into peach yogurt and mix until smooth. Stir in the remaining peaches.
- Serve the waffle dippers warm with the yogurt dip. Garnish with optional toasted pecans and ground cinnamon.
Notes
- Use fresh peaches when in season for added flavor.
- Frozen peaches must be thawed and drained to avoid excess moisture.
- Do not overmix the batter to keep waffles light and fluffy.
- Serve immediately for best texture or reheat gently if stored.
