  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter using an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry flour mixture to the wet peanut butter mixture, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly into the dough.
  7. Using a cookie scoop or tablespoon, drop dough into each muffin cup, filling about halfway.
  8. Bake for 10-12 minutes or until the edges are slightly golden.
  9. Let the cookie cups cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
