  • 1 cup brown sugar
  • 1 teaspoon ground ginger
  • 1/2 cup unsalted butter (1 stick), melted
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing it into rings.
  2. Preheat your oven to 350°F (175°C).
  3. In a 9-inch round cake pan, pour the melted butter and sprinkle the brown sugar evenly over it. Arrange the pineapple rings on top.
  4. In a medium bowl, whisk together the all-purpose flour, baking powder, ground ginger, ground cinnamon, and salt.
  5. In a large bowl, beat the eggs and granulated sugar together until light and fluffy. Add the vanilla extract and mix well. Gradually add the dry ingredients to the wet mixture, alternating with the reserved pineapple juice.
  6. Gently pour the batter over the arranged pineapple rings in the cake pan.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then invert it onto a serving plate.
  9. Allow the cake to cool slightly before slicing and serving.
