Description

Pineapple Granita is a refreshing, icy dessert made with fresh pineapple, citrus juice, and a touch of dark brown sugar, then topped with whipped cream, diced pineapple, and toasted coconut flakes. It’s a tropical, dairy-optional treat perfect for hot days or light dessert cravings.


Ingredients

  • 2 cups pineapple, peeled and cubed
  • 1/2 cup freshly squeezed mandarin orange juice
  • 1/4 cup packed dark brown sugar
  • 2 teaspoons lime juice
  • Pinch kosher salt
  • Whipped cream (for serving)
  • Toasted coconut flakes (for serving)
  • Fresh pineapple, diced small (for serving)

Instructions

  1. Cube the pineapple to get about 2 cups. Juice the mandarins to make 1/2 cup of juice.
  2. In a blender, combine pineapple cubes, mandarin juice, dark brown sugar, lime juice, and a pinch of salt. Blend until smooth and let stand for 1 minute, then blend again.
  3. Strain the blended mixture through a fine-mesh sieve into a shallow baking dish, discarding solids.
  4. Freeze uncovered for 2 hours, then scrape the mixture with a fork to break up ice crystals. Return to freezer.
  5. After another 2 hours, scrape again to maintain the granita’s flaky texture.
  6. Freeze for 1 additional hour or until solid. Scrape with a fork just before serving to fluff the texture.
  7. Serve in bowls, topped with whipped cream, diced pineapple, and toasted coconut flakes.
