Description

Pineapple upside-down muffins are a delightful treat that combines the classic flavors of a traditional pineapple upside-down cake with the convenience of a muffin.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup crushed pineapple, drained
  • 68 maraschino cherries (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a small saucepan over medium heat, melt 1/4 cup of the butter and stir in the brown sugar until dissolved. Distribute the mixture into the bottom of each muffin cup, place a pineapple ring in each cup, and add a maraschino cherry if desired.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, beat the remaining 1/4 cup of softened butter with the granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, mixing just until combined. Fold in the crushed pineapple gently.
  7. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for about 5 minutes, then carefully invert the muffin tin onto a serving platter.
  10. Enjoy these delightful muffins warm or at room temperature.
