Description
Pineapple upside-down muffins are a delightful treat that combines the classic flavors of a traditional pineapple upside-down cake with the convenience of a muffin.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup crushed pineapple, drained
- 6–8 maraschino cherries (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a small saucepan over medium heat, melt 1/4 cup of the butter and stir in the brown sugar until dissolved. Distribute the mixture into the bottom of each muffin cup, place a pineapple ring in each cup, and add a maraschino cherry if desired.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the remaining 1/4 cup of softened butter with the granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, mixing just until combined. Fold in the crushed pineapple gently.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for about 5 minutes, then carefully invert the muffin tin onto a serving platter.
- Enjoy these delightful muffins warm or at room temperature.
