Description

Pineapple Upside Down Sugar Cookies are soft, chewy sugar cookies infused with crushed pineapple and topped with a caramelized fruit center. Inspired by the classic pineapple upside-down cake, these cookies deliver tropical sweetness and buttery goodness in every bite.

  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • ¼ cup brown sugar, packed
  • ½ cup maraschino cherries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream the butter and granulated sugar using an electric mixer until light and fluffy (about 3–4 minutes).
  4. Add in the egg and vanilla extract, mixing until fully combined.
  5. Gradually add the dry mixture to the wet mixture, mixing until a thick dough forms.
  6. Fold in the drained crushed pineapple and sprinkle in the brown sugar, mixing gently.
  7. Use a cookie scoop to drop tablespoons of dough onto baking sheets, spacing them 2 inches apart. Optionally, press a maraschino cherry into the center of each cookie.
  8. Bake for 10–12 minutes or until edges are golden and centers are slightly soft.
  9. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
