  • 1 cup semi-sweet chocolate chips
  • 3/4 cup powdered sugar
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/3 cup finely ground pistachios (plus extra for garnish)
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grease four 6-ounce ramekins with butter and dust with finely ground pistachios.
  3. In a medium bowl, melt the butter and chocolate chips over a double boiler or in the microwave. Stir until smooth.
  4. Remove from heat and stir in powdered sugar.
  5. Add eggs and egg yolks, followed by vanilla extract.
  6. Mix in ground pistachios, flour, and salt until just combined.
  7. Divide the batter evenly among the ramekins, filling each about three-quarters full.
  8. Place ramekins on a baking sheet and bake for 12-14 minutes, until edges are set and centers are soft.
  9. Let cool for 1 minute, then run a knife around edges and invert onto serving plates.
  10. Garnish with chopped pistachios and serve immediately.
