Description

  • 1 cup pistachios (shelled, unsalted)
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups milk (whole or preferred type)
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 12 drops green food coloring (optional)

Instructions

  1. Finely chop the pistachios using a food processor or by hand. Optionally, lightly toast the pistachios in a dry skillet for 5 minutes. Set aside a few pieces for garnishing.
  2. In a large saucepan, whisk together granulated sugar, cornstarch, and salt.
  3. In a separate bowl, whisk together the milk and egg yolks, then gradually pour the mixture into the dry ingredients, stirring constantly.
  4. Place the saucepan over medium heat and stir continuously. After about 10 minutes, when the mixture thickens, stir in butter, vanilla extract, and chopped pistachios. Add food coloring if desired.
  5. Pour the pudding into serving cups or a large bowl. Press plastic wrap onto the surface to prevent a skin from forming, then refrigerate for 2-3 hours or until fully set.

Notes

  • For a dairy-free version, substitute milk with almond milk, coconut milk, or oat milk.
  • Maple syrup or agave nectar can replace sugar for a natural sweetener alternative.
  • Use arrowroot powder or tapioca starch as a cornstarch alternative for gluten-free pudding.
  • For a vegan version, consider blending silken tofu until smooth to replace egg yolks.
