Instructions
- Lightly grease or line a 9×13 inch baking dish with parchment paper.
- In a large pot over low heat, melt the butter. Add marshmallows and stir continuously until smooth and fully melted (about 5–7 minutes).
- Remove from heat and stir in vanilla extract and salt.
- Quickly add the Rice Krispies cereal, mixing until evenly coated, then fold in the chopped pistachios.
- Transfer mixture into prepared dish. Press evenly using a greased spatula or hands. Let cool for 30 minutes.
- Melt dark chocolate using microwave (30-second increments) or double boiler. Drizzle or spread over cooled treats. Add melted coconut oil if using.
- Allow chocolate to set, then slice into bars or squares. Serve at room temperature or chilled for a firmer texture.
