Description
A refreshing, nutrient-packed dessert that blends sweet-tart pomegranate and raspberry flavors with the unique texture of chia seeds. It’s perfect for health-conscious eaters and makes a vibrant treat for any occasion.
Ingredients
Scale
- ½ cup chia seeds
- 2 cups almond milk (or any milk of choice)
- 1 cup fresh raspberries
- 1 cup pomegranate juice (preferably 100% pure)
- 2–4 tablespoons maple syrup (or honey, to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a medium bowl, combine chia seeds, almond milk, and salt. Whisk well to prevent clumping and let it sit for 10–15 minutes to thicken.
- Meanwhile, in a blender, combine fresh raspberries, pomegranate juice, maple syrup (or honey), and vanilla extract. Blend until smooth or pulse for a chunkier texture.
- Once the chia mixture has thickened, fold in the blended fruit mixture. Stir until well combined.
- Transfer the mixture into serving bowls or jars. Cover and refrigerate for at least 2–4 hours or overnight.
- Garnish with fresh raspberries, pomegranate seeds, nuts, or granola before serving.
Notes
- Use plant-based milk for a dairy-free version.
- Sweeten naturally with stevia or monk fruit if avoiding sugar.
- This recipe is naturally gluten-free—just double-check processed ingredients.
- Add lemon or orange zest for a citrusy twist.
