Description

Poptart Cookie Bars are a delightful hybrid of soft, chewy cookies and nostalgic toaster pastries. Filled with fruity preserves and topped with a sweet glaze and optional sprinkles, they’re a fun, colorful treat perfect for all ages.

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup fruit preserves (strawberry, raspberry, or blueberry)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • Optional sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (about 3–4 minutes).
  3. Add the egg and vanilla extract; beat until fully incorporated.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Divide the dough in half. Press one half into the prepared baking pan to create the base.
  7. Spread fruit preserves evenly over the base, leaving a slight border around the edges.
  8. Crumble the remaining dough evenly over the preserves and gently press it down.
  9. Bake for 25–30 minutes or until the top is lightly golden and a toothpick comes out clean.
  10. Cool completely in the pan before glazing.
  11. In a small bowl, whisk together powdered sugar and milk to form a smooth glaze.
  12. Drizzle glaze over cooled bars and top with sprinkles, if desired. Let set before slicing.

Notes

  • Don’t overmix the dough—stop once it’s combined to keep bars soft.
  • Use softened, not melted, butter for best texture.
  • Cool completely before glazing to prevent the glaze from melting.
  • Chill sticky dough for 30 minutes for easier handling.
  • Parchment paper makes removing the bars from the pan much easier.
