Description

These Potato Chip Cookies are a sweet and salty treat, combining classic chocolate chip cookie dough with the irresistible crunch of crushed kettle-style potato chips. A surprising twist on a familiar favorite.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2/3 cup light brown sugar
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup semisweet chocolate chips
  • 2 3/4 cups crushed kettle-style potato chips, divided

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, baking soda, and kosher salt.
  2. In a stand mixer, cream the light brown sugar, granulated sugar, and unsalted butter on medium-high speed for 2–3 minutes until light and fluffy.
  3. Add the egg and vanilla extract. Mix until fully combined. Reduce speed and gradually add the dry ingredients. Mix until just combined.
  4. Fold in the chocolate chips and 2 cups of crushed potato chips using a spatula. Do not overmix. Cover the dough and refrigerate for 1 hour.
  5. Line two baking sheets with parchment paper. Place the remaining 3/4 cup crushed potato chips in a shallow dish.
  6. Scoop chilled dough into 3-tablespoon-sized balls. Roll each in the remaining potato chips and press gently to adhere. Place 1 inch apart on baking sheets and flatten slightly into 2 1/2-inch disks.
  7. Bake for 11–14 minutes, rotating the baking sheets halfway through. Cookies should be golden around the edges and slightly puffed.
  8. Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chilling the dough helps prevent cookies from spreading too much.
  • Try using flavored chips for added twist (e.g., BBQ or sour cream & onion).
  • Dark chocolate chips can add a richer flavor.
  • These cookies keep well in an airtight container for up to 5 days.
