Ingredients

  • 1 ½ cups rolled oats
  • 1/2 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1 cup blueberries
  • 1/4 cup honey
  • 1/4 cup almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon chia seeds

Instructions

  1. Preheat oven to 350°F (175°C). Line or lightly grease a muffin tin.
  2. In a large bowl, mix oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together eggs, cottage cheese, Greek yogurt, honey, almond milk, and vanilla until smooth.
  4. Gently fold wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Fold in chia seeds and then gently fold in blueberries.
  6. Divide batter into the muffin tin, filling each cup 3/4 full.
  7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean or with a few crumbs.
  8. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw before adding.
  • These muffins store well in the fridge for up to 5 days or in the freezer for up to 2 months.
  • For added protein, you can mix in a tablespoon of protein powder, adjusting liquid slightly if needed.
