  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar (for cream cheese mixture)
  • 1/4 cup granulated sugar (for brownie batter)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (optional, for extra chocolate flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch (20×20 cm) baking pan with parchment paper.
  2. In a medium bowl, beat the softened cream cheese with 1/2 cup of granulated sugar until smooth. Add 1 egg, 1 cup of pumpkin puree, and 1 teaspoon of vanilla extract, mixing until well combined.
  3. In a large bowl, whisk together the melted butter and 1/4 cup of granulated sugar until combined. Add the remaining egg and 1 teaspoon of vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the semi-sweet chocolate chips.
  6. Pour half of the brownie batter into the prepared baking pan and spread it evenly. Spoon dollops of the pumpkin cream cheese mixture over the brownie batter, then pour the remaining brownie batter on top. Use a knife to gently swirl the cream cheese mixture into the brownie batter.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the brownies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before cutting into squares.

Notes

  • Store leftover brownies in an airtight container at room temperature for up to three days.
  • For longer storage, refrigerate them to keep them fresh.
