These Pumpkin Maple Pecan Cookie Dough Bites are a delightful treat that combines the warm flavors of fall with a satisfying crunch. The sweet and nutty taste of maple syrup pairs perfectly with the earthy notes of pumpkin and the rich texture of pecans.
Ingredients
Scale
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1 cup almond flour
- 1/2 cup pecans, chopped
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/4 cup maple syrup (for glaze)
Instructions
- In a large mixing bowl, combine the pumpkin puree and 1/2 cup of maple syrup. Mix well until smooth.
- Stir in the almond flour, ground cinnamon, ground nutmeg, vanilla extract, and sea salt. Mix until all ingredients are well incorporated.
- Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the dough.
- Using your hands or a cookie scoop, form the dough into rounded mounds, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
- Cover the baking sheet with plastic wrap and refrigerate for at least 30 minutes to allow the dough to firm up.
- In a small bowl, combine the additional 1/4 cup of maple syrup for drizzling over the cookie dough bites.
- Once the dough bites are chilled, remove them from the refrigerator. Drizzle the maple glaze over each bite.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- For longer storage, freeze the cookie dough bites for up to three months.
- Let frozen bites thaw in the refrigerator overnight before serving.
