Description

Pumpkin Pie Cinnamon Roll Casserole is a cozy, autumn-inspired dish that blends the rich, spiced flavor of pumpkin pie with the gooey sweetness of cinnamon rolls, resulting in a warm and creamy baked dessert perfect for fall mornings or festive gatherings.

Ingredients

Scale
  • 2 cans of refrigerated cinnamon rolls (about 1216 rolls each)
  • 1 cup of pure pumpkin puree
  • 1/2 cup of heavy cream
  • 1/2 cup of brown sugar (packed)
  • 1/2 cup of granulated sugar
  • 4 large eggs
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of pumpkin pie spice
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1 cup of chopped pecans or walnuts (optional)
  • 1/2 cup of powdered sugar (for drizzle, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large baking dish with cooking spray or butter.
  2. Open the cans of cinnamon rolls, separate them, and cut each roll into quarters. Set aside.
  3. In a large bowl, whisk together pumpkin puree, heavy cream, brown sugar, granulated sugar, eggs, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Spread the cut cinnamon roll pieces evenly in the prepared dish.
  5. Pour the pumpkin mixture over the cinnamon rolls, ensuring they are well coated. Sprinkle with chopped pecans or walnuts if using.
  6. Bake for 30–40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Optional: Mix powdered sugar with a little water or milk to create a drizzle and pour over the warm casserole before serving.

Notes

  • Dairy-free options include using coconut cream and vegan cinnamon rolls.
