Ingredients

  • 1 cup unsalted butter, softened (about 226 grams)
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam (or preserves)
  • Optional: sliced almonds for garnish

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Beat in the egg, vanilla extract, and almond extract until well combined.
  3. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  4. Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. On a lightly floured surface, roll out one disk of dough to about 1/8 inch thick and cut out cookies.
  7. Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
  8. Once the cookies are completely cool, spread a teaspoon of raspberry jam on the solid cookies and top with a cookie that has the heart cutout.
  9. Dust the tops of the cookies with powdered sugar before serving.
