Description
These Raspberry Brownies combine rich, fudgy chocolate with bursts of fresh raspberries and melty chocolate chips for a decadent dessert. They’re the perfect balance of tart and sweet, making them an irresistible treat for any occasion.

- 200 g dark chocolate
- 200 g unsalted butter
- 275 g caster sugar
- 4 medium eggs (or 3 large)
- 150 g plain flour
- 50 g cocoa powder
- 300 g raspberries
- 150 g chocolate chips
Instructions
- Preheat your oven to 180°C (160°C fan) and line a 9″x9″ square tin with parchment paper.
- In a saucepan, melt the dark chocolate, butter, and caster sugar over low heat, stirring frequently until smooth. Transfer to a bowl and let cool for 10 minutes.
- Stir in the eggs one at a time, mixing well after each addition.
- Sift in the flour and cocoa powder and mix until just combined.
- Fold in 2/3 of the raspberries gently.
- Pour the batter into the prepared tin. Top with the remaining raspberries and chocolate chips.
- Bake for 30–35 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool completely in the tin before slicing and serving.
Notes
- Use dairy-free chocolate and coconut oil to make it vegan.
- Swap caster sugar with coconut sugar for a healthier twist.
- For a gluten-free version, use a 1:1 gluten-free flour blend.
- Add chopped walnuts or espresso powder for flavor variation.
