Description

These Raspberry Chocolate Truffles are a luxurious blend of creamy white chocolate, tangy freeze-dried raspberries, and rich dark chocolate. With a soft raspberry-infused center and a smooth dark chocolate shell, they deliver an irresistible contrast in texture and flavor.

  • 1 oz freeze-dried raspberries
  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberries for decoration

Instructions

  1. Add freeze-dried raspberries to a food processor and pulse until finely powdered. Let the powder settle before opening the lid.
  2. In a saucepan, heat heavy cream over medium heat until it simmers. Pour the hot cream over a bowl of white chocolate melting wafers and raspberry powder. Let sit for 1 minute, then stir until smooth.
  3. Cover the bowl and refrigerate the mixture for 45 minutes to 1 hour, or until firm enough to scoop.
  4. Using a tablespoon or small scoop, form the mixture into 13 small balls. Place on a parchment-lined baking sheet and refrigerate for another hour.
  5. Set up a double boiler and melt the dark chocolate wafers until smooth, stirring occasionally.
  6. Dip the bottom of each chilled truffle into the melted dark chocolate. Drizzle more chocolate over the top and sprinkle with crushed freeze-dried raspberries.
  7. Refrigerate the coated truffles for 30 minutes to 1 hour, until the chocolate hardens completely.
