- 10g salt
- 7g instant yeast
- 250ml warm milk
- 2 large eggs
- 200g unsalted butter, cold and cubed
- 200g fresh raspberries
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- In a large mixing bowl, combine flour, sugar, salt, and yeast. In a separate bowl, whisk warm milk and eggs, then combine with dry ingredients to form a shaggy dough.
- Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Roll out the risen dough into a rectangle. Place cubed cold butter in the center, fold dough over it, and roll into a larger rectangle. Perform a letter fold and repeat the folding process twice, chilling the dough for 20-30 minutes between each fold.
- Roll out dough to ¼-inch thickness and cut with a donut cutter. Place on parchment-lined sheets and let rise for another 30 minutes.
- Fill each donut with a raspberry and lemon juice mixture using a piping bag.
- Heat oil to 350°F (175°C) and fry the donuts until golden brown on both sides. Remove and drain on paper towels.
- Dust warm donuts with powdered sugar and serve immediately.
