Description

Raspberry Croissant Sourdough Donuts are a creative twist on the traditional donut, combining the flaky layers of a croissant with the tang of sourdough and the sweet-tart flavor of fresh raspberry filling. Crispy on the outside and soft inside, these donuts offer a delicious fusion of texture and taste.


Ingredients

  • 500g all-purpose flour
  • 75g granulated sugar
  • 10g salt
  • 7g instant yeast
  • 250ml warm milk
  • 2 large eggs
  • 200g unsalted butter, cold and cubed
  • 200g fresh raspberries
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast. In a separate bowl, whisk warm milk and eggs, then combine with dry ingredients to form a shaggy dough.
  2. Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  3. Roll out the risen dough into a rectangle. Place cubed cold butter in the center, fold dough over it, and roll into a larger rectangle. Perform a letter fold and repeat the folding process twice, chilling the dough for 20-30 minutes between each fold.
  4. Roll out dough to ¼-inch thickness and cut with a donut cutter. Place on parchment-lined sheets and let rise for another 30 minutes.
  5. Fill each donut with a raspberry and lemon juice mixture using a piping bag.
  6. Heat oil to 350°F (175°C) and fry the donuts until golden brown on both sides. Remove and drain on paper towels.
  7. Dust warm donuts with powdered sugar and serve immediately.
