- 1 cup rolled oats
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, melted
- ½ cup brown sugar, packed
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen raspberries
- ½ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Start by making the raspberry filling: In a medium saucepan over medium heat, combine raspberries, sugar, cornstarch, and lemon juice. Stir and cook until the mixture thickens, about 5-8 minutes. Remove from heat and let cool.
- In a large bowl, mix together the flour, oats, baking powder, and salt. In another bowl, whisk together the melted butter, brown sugar, granulated sugar, and vanilla extract until smooth. Add the wet ingredients to the dry ingredients and mix until a crumbly texture forms. Reserve 1 cup of the mixture for topping.
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper. Press the remaining crumb mixture into the bottom of the dish to form the crust.
- Pour the cooled raspberry filling over the crust, spreading it evenly. Sprinkle the reserved crumb mixture on top.
- Bake for 30-35 minutes, or until the topping is golden and the filling is bubbling. Allow the bars to cool for at least 30 minutes. Remove from the pan using the parchment paper, cut into squares, and serve.

- Store in an airtight container at room temperature for up to 3 days.
- For a longer shelf life, refrigerate for up to a week or freeze for up to 3 months.
- If the dough becomes sticky, refrigerate it for 15-20 minutes to make it easier to handle.
