Description
Raspberry Crumble Cookies with Jam Filling are tender, buttery cookies filled with tangy raspberry jam and topped with a sweet oat crumble. These easy-to-make treats are both chewy and crumbly, perfect for tea time or dessert.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup raspberry jam (or preferred jam)
- 1/4 cup rolled oats
- 1/4 cup powdered sugar (for dusting, optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add vanilla extract and mix until combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
- Fold in rolled oats until evenly distributed. Let the dough rest briefly.
- Use a cookie scoop or spoon to drop dough portions onto the baking sheet. Flatten slightly and make an indentation in the center of each cookie.
- Fill each indentation with about 1/2 tsp of raspberry jam.
- Crumb remaining dough over the jam filling, allowing some of the jam to show through.
- Bake for 12–15 minutes, or until edges are lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Optionally, dust with powdered sugar.

- For gluten-free cookies, use a 1:1 gluten-free flour blend with xanthan gum and certified gluten-free oats.
- Substitute butter with dairy-free butter or coconut oil for a dairy-free version.
- Use coconut or maple sugar as alternatives to granulated sugar.
