Description

Raspberry Crumble Cookies with Jam Filling are tender, buttery cookies filled with tangy raspberry jam and topped with a sweet oat crumble. These easy-to-make treats are both chewy and crumbly, perfect for tea time or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup raspberry jam (or preferred jam)
  • 1/4 cup rolled oats
  • 1/4 cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add vanilla extract and mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Fold in rolled oats until evenly distributed. Let the dough rest briefly.
  6. Use a cookie scoop or spoon to drop dough portions onto the baking sheet. Flatten slightly and make an indentation in the center of each cookie.
  7. Fill each indentation with about 1/2 tsp of raspberry jam.
  8. Crumb remaining dough over the jam filling, allowing some of the jam to show through.
  9. Bake for 12–15 minutes, or until edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Optionally, dust with powdered sugar.

Notes

  • For gluten-free cookies, use a 1:1 gluten-free flour blend with xanthan gum and certified gluten-free oats.
  • Substitute butter with dairy-free butter or coconut oil for a dairy-free version.
  • Use coconut or maple sugar as alternatives to granulated sugar.
  • Jam can be swapped for apricot, strawberry, or your favorite flavor.
  • Add a dash of cinnamon or almond extract for extra flavor depth.
