  • 1/4 cup water

Instructions

  1. Prepare the raspberries by rinsing them under cold water and gently patting them dry. If using frozen raspberries, thaw them completely. Mash the raspberries with granulated sugar and lemon juice until smooth. Set aside.
  2. Whip 1 cup of heavy whipping cream in a large mixing bowl until soft peaks form. Add powdered sugar and vanilla extract, then continue whipping until stiff peaks form.
  3. Prepare the gelatin by sprinkling it over 1/4 cup water and letting it sit for 5 minutes. Heat gently until dissolved, then let it cool slightly.
  4. Fold the raspberry puree into the whipped cream, then gently fold in the cooled gelatin mixture until fully combined.
  5. Spoon the mousse into serving cups or a large bowl, cover with plastic wrap, and refrigerate for 2-4 hours or until set.
