Description

  • 2 cups crushed pretzels
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tub (8 oz) whipped topping (e.g., Cool Whip)
  • 2 cups fresh raspberries (or frozen, thawed and drained)
  • 1 cup raspberry gelatin (e.g., Jell-O)
  • 2 cups boiling water

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed pretzels, granulated sugar, and melted butter in a bowl. Press into the bottom of a 9×13 inch baking dish. Bake for 10 minutes or until lightly golden. Let cool completely.
  2. In a separate bowl, beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping until well combined. Spread over the cooled crust and refrigerate for 1 hour.
  3. Dissolve raspberry gelatin in 2 cups boiling water. Stir until fully dissolved and let cool slightly. Fold in the raspberries.
  4. Pour the raspberry mixture over the cream cheese layer. Refrigerate for 2–4 hours, or until set. Cut into squares and serve chilled.
