Raspberry Streusel Muffins are soft and fluffy muffins bursting with juicy raspberries and topped with a buttery, cinnamon-infused streusel. They’re perfect for spring brunches, weekend breakfasts, or afternoon snacks.

- 1 ½ cups all-purpose flour (muffins)
- ½ cup granulated sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup buttermilk (or milk of choice)
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries (or frozen, thawed)
- ½ cup all-purpose flour (streusel)
- ⅓ cup brown sugar
- ¼ teaspoon cinnamon
- ¼ cup cold unsalted butter, cubed
Instructions
- Preheat the oven to 350°F (175°C) and line or grease a muffin pan.
- In a large bowl, whisk together 1½ cups flour, ½ cup sugar, ½ tsp baking powder, ½ tsp baking soda, and ¼ tsp salt.
- In another bowl, whisk together the egg, buttermilk, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry and gently mix until just combined. Fold in raspberries.
- In a separate bowl, mix ½ cup flour, brown sugar, and cinnamon. Cut in butter until crumbly.
- Divide the muffin batter into the pan, filling each about ¾ full. Top with streusel mixture.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep muffins light and tender.
- Use fresh raspberries for best flavor, but thawed frozen berries also work.
- Try adding lemon zest to the batter for a bright citrus note.
- Store in an airtight container for up to 3 days at room temperature.
