Description

These Red Velvet Cookie Bars are soft, chewy, and full of rich cocoa flavor with a vibrant red hue. Finished with optional white chocolate chips, they’re perfect for festive occasions or a sweet treat anytime.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1½ cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add the eggs, vanilla extract, and red food coloring. Mix on low speed until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. If using, fold in the white chocolate chips with a spatula.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Allow the bars to cool in the pan for 10 minutes, then lift them out using the parchment overhang and let cool completely before slicing.

Notes

  • To make these gluten-free, use a gluten-free baking blend instead of all-purpose flour.
  • For a dairy-free version, use vegan butter and dairy-free white chocolate chips.
  • Try coconut sugar or a sugar alternative for a healthier twist.
  • Add a teaspoon of almond extract or mix in chopped nuts for extra flavor and texture.
