Ingredients

  • 1/2 cup tahini
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 2 large eggs (or flax eggs for a vegan option)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Roast the bananas on a baking sheet for 15-20 minutes until soft and caramelized, then mash them.
  3. In a bowl, mix the mashed bananas, tahini, honey, eggs, and vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
