  • 1/2 cup granulated sugar, divided
  • 1/2 cup unsalted butter, melted
  • 1 cup semi-sweet chocolate chips

  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and spread the halved cherries in a single layer. Sprinkle with 2 tablespoons of granulated sugar and roast for 15-20 minutes until softened and caramelized. Let them cool.
  2. In a microwave-safe bowl, combine melted butter and chocolate chips. Microwave in 30-second intervals, stirring until melted and smooth. Allow to cool slightly.
  3. In a large mixing bowl, whisk together the eggs, remaining 1/4 cup of sugar, and vanilla extract. Stir in the cooled chocolate mixture until fully incorporated.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually fold into the wet mixture until just combined. Gently fold in the roasted cherries.
  5. Pour the batter into a greased 9×9-inch baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
