Ingredients

  • 300 grams (10.5 oz) pasta (penne or rigatoni work well)
  • 1 head of garlic
  • 240 ml (1 cup) heavy cream
  • 100 grams (1 cup) grated Parmesan cheese
  • 200 grams (2 cups) shredded mozzarella cheese
  • 50 grams (1/2 cup) breadcrumbs
  • 2 tablespoons olive oil
  • Salt – to taste
  • Black pepper – to taste
  • Fresh parsley – for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, and wrap it in foil. Roast for about 30-35 minutes until soft and golden.
  2. While the garlic is roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Once the garlic is cool, squeeze the cloves into a bowl. Mash them with a fork. In a saucepan, combine the mashed garlic, heavy cream, Parmesan cheese, salt, pepper, and Italian seasoning. Heat over medium until the cheese melts and the sauce thickens.
  4. Mix the cooked pasta with the sauce in a large bowl. Pour the mixture into a baking dish. Top with mozzarella cheese. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden. Garnish with fresh parsley before serving.

  • For a lighter version, use half-and-half instead of heavy cream.
  • If you’re lactose intolerant, try a dairy-free cream and nutritional yeast for a cheesy flavor.
