Ingredients

  • 1.5 lbs (about 700 grams) of baby potatoes
  • 4 cloves of garlic, minced
  • 1 cup of grated Parmesan cheese
  • 3 tablespoons of olive oil
  • 2 tablespoons of fresh rosemary, chopped (or 1 tablespoon dried rosemary)
  • Black pepper, to taste
  • Sea salt, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly and cut them in half or quarters.
  3. In a large mixing bowl, combine the halved baby potatoes, minced garlic, olive oil, chopped rosemary, black pepper, and sea salt. Toss until well coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast the potatoes for about 25-30 minutes, stirring halfway through.
  6. Remove from the oven, sprinkle grated Parmesan cheese over the potatoes, and return to the oven for an additional 5-10 minutes.
  7. Let cool for a few minutes before serving.
