- 2 cups fresh rhubarb, chopped
- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- ¾ cup brown sugar, packed
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, combine the chopped rhubarb with ¼ cup of granulated sugar. Toss well to coat and set aside.
- In a large mixing bowl, combine the softened butter, brown sugar, and vanilla extract. Beat until creamy. Add the flour, rolled oats, baking powder, cinnamon, and salt. Mix until crumbly.
- Press about two-thirds of the crumble mixture into the bottom of the prepared baking pan. Spread the rhubarb mixture over the crust and sprinkle the remaining crumble mixture on top.
- Bake for 35-40 minutes, or until the top is golden brown and the rhubarb is bubbling.
- Allow to cool completely in the pan on a wire rack before cutting into squares or bars.

- Replace butter with coconut oil for a dairy-free version.
