Description

Rustic Rhubarb Crumble Bars are a delightful dessert featuring a soft, buttery crust topped with tangy rhubarb and a crunchy crumble, perfect for any occasion.


Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the chopped rhubarb with ¼ cup of granulated sugar. Toss well to coat and set aside.
  3. In a large mixing bowl, combine the softened butter, brown sugar, and vanilla extract. Beat until creamy. Add the flour, rolled oats, baking powder, cinnamon, and salt. Mix until crumbly.
  4. Press about two-thirds of the crumble mixture into the bottom of the prepared baking pan. Spread the rhubarb mixture over the crust and sprinkle the remaining crumble mixture on top.
  5. Bake for 35-40 minutes, or until the top is golden brown and the rhubarb is bubbling.
  6. Allow to cool completely in the pan on a wire rack before cutting into squares or bars.
