Salted Caramel Brownie Truffles are rich, indulgent treats made by combining crumbled brownies with chocolate ganache, filled with gooey homemade salted caramel, and dipped in smooth dark chocolate. These bite-sized delights are perfect for any occasion and can be adapted for gluten-free or vegan diets.

- 5 cups (about 600 g) your favourite brownies, crumbled
- 1/2 cup chocolate ganache
- 1 cup (200 g) caster sugar
- 2/3 stick (70 g) unsalted butter, room temperature
- 1/2 cup (115 mL) double cream
- 1/2 tsp salt
- 8.8 oz (250 g) dark chocolate, melted
Instructions
- Prepare the Brownie Mixture: In a large mixing bowl, combine the crumbled brownies with the chocolate ganache. Mix until the mixture is moist and cohesive. Add more ganache if needed to reach a dough-like consistency.
- Form the Brownie Balls: Roll the mixture into small balls (about 1 tbsp each). Place them on a parchment-lined baking sheet and refrigerate for 10–15 minutes.
- Make the Salted Caramel: In a medium saucepan, heat the caster sugar over medium-high heat, stirring constantly until it melts and turns golden brown. Stir in the butter until melted and combined. Slowly add the double cream while stirring. Cook for 1–2 minutes to thicken slightly. Stir in the salt and allow the caramel to cool completely.
- Assemble the Truffles: Flatten each chilled brownie ball in your palm. Add a teaspoon of cooled salted caramel to the center, then fold and seal the brownie around the caramel. Roll it back into a ball. Chill again briefly to firm.
- Coat with Chocolate: Melt the dark chocolate and dip each truffle into it, ensuring even coating. Let excess drip off, then place on parchment paper. Let set at room temperature for 30 minutes until chocolate is firm.
