Ingredients

- 2 cups (480 ml) heavy cream
- 1 cup (240 ml) whole milk
- 3/4 cup (150 g) granulated sugar
- 4 large egg yolks
- 1 teaspoon (5 ml) vanilla extract
- 1/2 teaspoon (2.5 g) sea salt
- 1 cup (240 ml) homemade caramel sauce
Instructions
- Make the caramel sauce by melting sugar in a saucepan until amber, then adding butter and cream.
- Prepare the ice cream base by heating cream, milk, and sugar until dissolved.
- Whisk egg yolks until pale, then temper with warm cream mixture.
- Combine and cook the egg yolk mixture with the cream until thickened.
- Strain the mixture, add vanilla and salt, then cool and refrigerate.
- Churn the chilled mixture in an ice cream maker.
- Swirl in the caramel sauce into the churned ice cream.
- Freeze the ice cream until firm.
- Serve and enjoy!

- For a dairy-free version, use coconut cream and almond milk.
- Replace granulated sugar with coconut sugar for a lower-calorie option.
- For a vegan version, use aquafaba instead of egg yolks.
