Ingredients

  • 2 cups all-purpose flour (240 grams)
  • 1/2 cup tahini (120 grams)
  • 1 cup unsalted butter, softened (226 grams)
  • 1/3 cup honey (113 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 1/2 teaspoon sea salt, plus extra for sprinkling
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened unsalted butter and granulated sugar. Beat until light and fluffy, about 3-4 minutes.
  3. Add tahini, honey, and vanilla extract to the mixture and mix until smooth.
  4. In a separate bowl, whisk together the all-purpose flour and sea salt. Gradually add to the wet mixture, mixing on low speed until just combined.
  5. Scoop out about 1 tablespoon of dough, roll into a ball, and place on the baking sheet, spacing them 2 inches apart. Flatten each ball into a round disk, about 1/2 inch thick.
  6. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  7. Sprinkle a small pinch of sea salt on top of each cookie while they are still warm.
  8. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
