- 2 cups (240 g) all-purpose flour
- 1/2 cup (120 g) tahini
- 1 cup (170 g) dark chocolate chunks
- 3/4 cup (150 g) packed brown sugar
- 1/4 cup (50 g) granulated sugar
- 2 large eggs
- 1 teaspoon (5 g) baking soda
- 1 teaspoon (5 ml) vanilla extract
- 1/2 teaspoon (2 g) sea salt plus extra for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine tahini, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract, mixing until fully incorporated.
- In another bowl, whisk together all-purpose flour, baking soda, and 1/2 teaspoon of sea salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in dark chocolate chunks.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Lightly sprinkle a pinch of sea salt on top of each cookie dough ball.
- Bake for 10-12 minutes, or until edges are golden brown and centers are still soft.
- Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store leftover cookies in an airtight container at room temperature for up to a week.
- For longer storage, refrigerate or freeze the cookies.
- Chill the dough for 30 minutes before baking for thicker cookies.
