- 1 cup cheddar cheese, shredded

- 1/4 teaspoon pepper (or to taste)
- Olive oil or cooking spray (for greasing the muffin tin)
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a standard 12-cup muffin tin with olive oil or cooking spray.
- In a large mixing bowl, crack the eggs and whisk them until well beaten.
- Stir in the cottage cheese until fully combined with the eggs.
- Add the chopped spinach, diced bell pepper, and finely chopped onion to the egg mixture and stir until evenly distributed.
- Sprinkle in the salt and pepper, mixing well.
- Fold in the shredded cheddar cheese, reserving a small amount to sprinkle on top.
- Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
- Sprinkle the reserved cheddar cheese on top of each muffin.
- Bake for 20-25 minutes, or until puffed up and golden brown.
- Let them cool in the tin for about 5 minutes before transferring to a wire rack.
