Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (preferably low-fat)
  • 1 cup fresh spinach, chopped
  • 1 medium bell pepper, diced (red or yellow for color)
  • 1 small onion, finely chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)
  • Olive oil or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a standard 12-cup muffin tin with olive oil or cooking spray.
  3. In a large mixing bowl, crack the eggs and whisk them until well beaten.
  4. Stir in the cottage cheese until fully combined with the eggs.
  5. Add the chopped spinach, diced bell pepper, and finely chopped onion to the egg mixture and stir until evenly distributed.
  6. Sprinkle in the salt and pepper, mixing well.
  7. Fold in the shredded cheddar cheese, reserving a small amount to sprinkle on top.
  8. Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
  9. Sprinkle the reserved cheddar cheese on top of each muffin.
  10. Bake for 20-25 minutes, or until puffed up and golden brown.
  11. Let them cool in the tin for about 5 minutes before transferring to a wire rack.

  • Store leftovers in an airtight container in the refrigerator for up to four days.
