Ingredients

- 4 cups all-purpose flour (500 grams)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 1/2 cups warm water (about 110°F or 43°C)
- 1/4 cup olive oil (60 ml)
- 1 teaspoon sea salt
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 1 tablespoon honey
Instructions
- Prepare the yeast by combining warm water and honey, then sprinkle yeast and let it sit until frothy.
- Mix the dry ingredients: whisk flour and sea salt, then add chopped herbs.
- Combine wet and dry ingredients, stirring until a shaggy dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Let the dough rise in a greased bowl covered for about 1 hour until doubled in size.
- Punch down the dough, divide into 12 pieces, and shape into balls.
- Let the rolls rise again in a greased skillet for about 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the rolls for 20-25 minutes until golden brown and hollow-sounding when tapped.
- Cool slightly, brush with olive oil, and serve warm.
Notes
- For gluten-free, use a gluten-free flour blend.
- For vegan, replace honey with a plant-based sweetener.
- Store in an airtight container at room temperature for up to 2 days.
- Freeze for up to 3 months, thaw overnight in the fridge before reheating.
