Ingredients
- Rice paper wrappers – 8 pieces
- Cooked shrimp – 16 large (peeled and deveined)
- Ripe avocado – 2 medium (sliced)
- Fresh mint leaves – 1/2 cup
- Fresh cilantro – 1/2 cup
- Vermicelli noodles – 1 cup (dry)
- Lime juice – 2 tablespoons
- Salt – to taste
- Water – for soaking rice paper
Instructions
- Prepare the vermicelli noodles by boiling them in water according to package instructions, then drain and rinse under cold water.
- If not already cooked, boil or steam the shrimp until they turn pink and opaque, then cool and slice in half lengthwise.
- Slice the ripe avocados into thin strips and rinse the fresh mint and cilantro leaves.
- Soak the rice paper wrappers in warm water for about 10-15 seconds until pliable.
- Assemble the summer rolls by placing vermicelli noodles, avocado slices, shrimp halves, and herbs on the soaked rice paper, then drizzle with lime juice and sprinkle with salt.
- Roll the summer rolls tightly from the bottom up, folding in the sides as you go.
