Ingredients

  • Rice paper wrappers – 8 pieces
  • Cooked shrimp – 16 large (peeled and deveined)
  • Ripe avocado – 2 medium (sliced)
  • Fresh mint leaves – 1/2 cup
  • Fresh cilantro – 1/2 cup
  • Vermicelli noodles – 1 cup (dry)
  • Lime juice – 2 tablespoons
  • Salt – to taste
  • Water – for soaking rice paper

Instructions

  1. Prepare the vermicelli noodles by boiling them in water according to package instructions, then drain and rinse under cold water.
  2. If not already cooked, boil or steam the shrimp until they turn pink and opaque, then cool and slice in half lengthwise.
  3. Slice the ripe avocados into thin strips and rinse the fresh mint and cilantro leaves.
  4. Soak the rice paper wrappers in warm water for about 10-15 seconds until pliable.
  5. Assemble the summer rolls by placing vermicelli noodles, avocado slices, shrimp halves, and herbs on the soaked rice paper, then drizzle with lime juice and sprinkle with salt.
  6. Roll the summer rolls tightly from the bottom up, folding in the sides as you go.
