- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 cup all-purpose flour (or whole wheat/gluten-free alternative)
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- Mash the ripe bananas in a large bowl until mostly smooth, leaving small chunks if desired.
- Add Greek yogurt, honey, egg, and vanilla extract to the mashed bananas and whisk until well combined.
- In a separate bowl, mix flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture and mix gently until just combined.
- Fold in the chocolate chips, reserving a few to sprinkle on top if desired.
- Spoon batter into the muffin tin, filling each cup about 2/3 full.
- Top with reserved chocolate chips and bake for 18–22 minutes, or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
