Description

Ingredients

  • 3 ripe bananas (preferably overripe)
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup honey (or maple syrup)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour (or whole wheat/gluten-free alternative)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Mash the ripe bananas in a large bowl until mostly smooth, leaving small chunks if desired.
  3. Add Greek yogurt, honey, egg, and vanilla extract to the mashed bananas and whisk until well combined.
  4. In a separate bowl, mix flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture and mix gently until just combined.
  6. Fold in the chocolate chips, reserving a few to sprinkle on top if desired.
  7. Spoon batter into the muffin tin, filling each cup about 2/3 full.
  8. Top with reserved chocolate chips and bake for 18–22 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
