Description

S’mores cookie bars are a gooey, chocolatey dessert that captures the nostalgic flavors of classic campfire s’mores in an easy-to-make cookie bar form. With layers of buttery graham cracker-infused dough, melty chocolate chips, and toasted marshmallows, these bars are the perfect treat for gatherings or cozy nights.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 2 cups semi-sweet chocolate chips
  • 2 cups mini marshmallows (or larger, halved)
  • 1/4 cup extra chocolate chips for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving overhang on the sides.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (3–5 minutes).
  3. Add eggs one at a time, beating well after each. Mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and graham cracker crumbs.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in 2 cups of chocolate chips, then gently stir in the marshmallows.
  7. Spread half of the dough into the prepared pan and press it down evenly.
  8. Sprinkle remaining marshmallows and chocolate chips on top, then dollop and spread the remaining dough over the top.
  9. Bake for 25–30 minutes until edges are golden and the center is just set.
  10. Let cool completely in the pan before lifting with parchment and slicing into squares.

Notes

  • Don’t overmix the dough to keep bars soft and chewy.
  • Line the baking pan with parchment paper for easy removal.
  • For thicker bars, chill the dough for 30 minutes before baking.
  • Drizzle with melted chocolate or caramel sauce for extra indulgence.
  • Bars can be stored in an airtight container at room temperature for up to 5 days.
