S’mores cookie bars are a gooey, chocolatey dessert that captures the nostalgic flavors of classic campfire s’mores in an easy-to-make cookie bar form. With layers of buttery graham cracker-infused dough, melty chocolate chips, and toasted marshmallows, these bars are the perfect treat for gatherings or cozy nights.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup graham cracker crumbs
- 2 cups semi-sweet chocolate chips
- 2 cups mini marshmallows (or larger, halved)
- 1/4 cup extra chocolate chips for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving overhang on the sides.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (3–5 minutes).
- Add eggs one at a time, beating well after each. Mix in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and graham cracker crumbs.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Fold in 2 cups of chocolate chips, then gently stir in the marshmallows.
- Spread half of the dough into the prepared pan and press it down evenly.
- Sprinkle remaining marshmallows and chocolate chips on top, then dollop and spread the remaining dough over the top.
- Bake for 25–30 minutes until edges are golden and the center is just set.
- Let cool completely in the pan before lifting with parchment and slicing into squares.
Notes
- Don’t overmix the dough to keep bars soft and chewy.
- Line the baking pan with parchment paper for easy removal.
- For thicker bars, chill the dough for 30 minutes before baking.
- Drizzle with melted chocolate or caramel sauce for extra indulgence.
- Bars can be stored in an airtight container at room temperature for up to 5 days.
