A delightful twist on the classic campfire treat, these S’mores Cookie Cups feature gooey chocolate, fluffy marshmallows, and a crunchy graham cracker crust, perfect for parties or cozy nights in.

- 1 ½ cups all-purpose flour
- ⅓ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- ½ cup graham cracker crumbs (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin cups to prevent sticking.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.
- Scoop about 1 tablespoon of cookie dough into each muffin cup, pressing it down to form a small cup shape. Make sure to leave some dough for the tops.
- Place a few chocolate chips in the center of each cookie cup, pressing them down slightly.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove the muffin tin from the oven and immediately top each cookie cup with mini marshmallows. Return to the oven for an additional 2-3 minutes, or until the marshmallows are lightly toasted.
- Allow the cookie cups to cool in the muffin tin for about 5 minutes before transferring them to a wire rack to cool completely. Once cooled, sprinkle graham cracker crumbs on top for added texture and flavor.
