Description

A delightful twist on the classic campfire treat, these S’mores Cookie Cups feature gooey chocolate, fluffy marshmallows, and a crunchy graham cracker crust, perfect for parties or cozy nights in.


Ingredients

  • 1 ½ cups all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • ½ cup graham cracker crumbs (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or use silicone muffin cups to prevent sticking.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Do not overmix.
  6. Scoop about 1 tablespoon of cookie dough into each muffin cup, pressing it down to form a small cup shape. Make sure to leave some dough for the tops.
  7. Place a few chocolate chips in the center of each cookie cup, pressing them down slightly.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Remove the muffin tin from the oven and immediately top each cookie cup with mini marshmallows. Return to the oven for an additional 2-3 minutes, or until the marshmallows are lightly toasted.
  10. Allow the cookie cups to cool in the muffin tin for about 5 minutes before transferring them to a wire rack to cool completely. Once cooled, sprinkle graham cracker crumbs on top for added texture and flavor.
