S’mores Cupcakes are a delightful twist on the classic campfire treat, featuring moist chocolate cake, fluffy marshmallow frosting, melted chocolate, and crunchy graham crackers. These cupcakes are perfect for parties, holidays, or when you’re craving something nostalgic and sweet.

- 1 (15.25-oz.) box chocolate cake mix (plus ingredients called for on the box)
- 4 fresh large egg whites
- 1 cup granulated sugar
- 1 tsp pure vanilla extract
- 1/2 tsp kosher salt
- 3/4 cup semisweet chocolate chips
- 5 graham crackers (divided)
Instructions
- Preheat the oven according to the cake mix box directions and line a 12-cup muffin tin with paper liners.
- Prepare the chocolate cake batter as directed on the box. Divide the batter evenly among the liners and bake for 18–22 minutes or until a toothpick comes out clean. Cool completely.
- To make the frosting, heat 1/2 cup of water in a saucepan. In a heatproof bowl over the simmering water, whisk egg whites and sugar for 5 minutes until sugar dissolves and mixture is warm.
- Remove from heat and beat the egg white mixture for 8 minutes until fluffy with soft peaks. Fold in vanilla extract and salt. Transfer to a piping bag with a star tip.
- In another heatproof bowl, melt chocolate chips over simmering water until smooth. Keep warm.
- Break 2 graham crackers into squares for garnish. Crush the remaining 3 into fine crumbs and place in a shallow bowl.
- Dip the edges of cooled cupcakes into melted chocolate, then into graham cracker crumbs.
- Pipe marshmallow frosting onto each cupcake in tall swirls. Place cupcakes on a baking sheet and broil briefly (30 seconds) until the frosting is golden brown. Garnish with graham cracker squares.

- Replace egg whites with aquafaba for a vegan alternative.
